Quinoa Salad – Warm or Cold

Jam-packed with goodness, this dish will satisfy the gourmet in you! Your body will thank you for the amount of raw food included!! Thank you, Olivia, for this inspiration!
2 cups organic quinoa
4 cups purified water

large pinch of organic sea salt

2 large organic tomatoes, chopped

6 organic asparagus spears, sliced finely

2 large cloves of garlic, chopped

4 organic garlic scapes, sliced finely

1 can of organic black beans, rinsed and drained

2 tbsps organic olive oil

the juice from 1 lime

1 tbsp dried dill

2 ounces of organic goat feta, crumbled

black pepper to taste


Bring the water to the boil. Add the sea salt. Add the quinoa and cook according to directions. When cooked, remove from heat. Add all other ingredients. Combine thoroughly. Serve either hot or cold with a nice, organic salad.


Approximately 8-10 servings
